Don’t waste your weeds
Our Bangladeshi volunteers have an interesting way of dealing with Fat Hen, a weed which is springing up all over the Community Garden right now. They pull it up and take it home to cook up as a delicious and nutritious veg – similar in taste and texture to spinach. Rukia says: wash it and remove the root, then steam it for a few moments. Meanwhile, fry some chopped garlic (and chilli - if it’s to your liking) until brown, take off the heat and mix in your Fat Hen. Flash fry a moment and it’s ready to eat.
Our Bangladeshi volunteers have given us a great tip for growing coriander: sow it in the autumn (September) in a cold frame or greenhouse and you’ll get a great strong-tasting crop through the winter months. Our volunteers sowed it directly into the soil in a corner of the polytunnel, and it certainly gave a tang to winter salad.
